Prawn Thokku

         Hello buddies 😊😊😊  If you are a sea food lover then you can't say no to prawns. Whatever dish it is, if it contains prawns then the taste goes to next level. Here we are going to look into a recipe, prawn thokku which tastes delicious. It can be even taken as an appetizer and the taste will never leave your tongue. Recipe goes below.

Ingredients

Prawns - 250 g after cleaning
Onions - 4 (big)
Tomatoes - 4
Green Chillies - 2
Ginger Garlic Paste - 1 tablespoon
Chilli Powder - 1 tablespoon
Grated Coconut - 1/2 cup
Fennel Seeds - 1 teaspoon
Coriander leaves
Salt
Gingelly Oil - 4 tablespoons





Procedure

  • Heat a kadai and add oil to it.
  • Once the oil gets hot, add in ginger garlic paste and cook till the raw smell goes away.
  • Add the chopped onions.
  • Let the onions cook till it turns golden brown.
  • Now add in the chopped tomatoes and green chillies.
  • Saute for about 5 mins.
  • Onions and tomatoes will turn mushy and start to leave oil from sides.
  • Now add salt and chilli powder.
  • Rinse the prawns in water 3 to 4 times till the water turns clear.
  • Now time to add in prawns.
  • Don't add any water, because prawns leave water while gets cooked.
  • Close the kadai and let it cook for 5 mins.
  • In the meantime grind the grated coconut and fennel seeds.
  • Open the pan and check whether the prawns are cooked.
  • Add in the ground paste and cook till the curry gets thick consistency.
  • Finally add chopped coriander leaves, which gives a nice aroma to the dish.
  • Plate it in a bowl and serve. It goes well with rice, roti.

Elephant Foot Yam Kola

Hello buddies 😊😊😊  Yam is a healthy food with lots of benefits in it. It is good to take yam in our day to day life. Kolas are always tasty and can be served as a appetizer. This can be the best alternative for mutton kola balls and becomes a treat for vegetarians. The recipe is easy to make. One important thing that you need to take care is the proper consistency of the mixture. Other than that it is really simple to make. Let's look into the recipe.

Ingredients

Senai Kizhangu (Elephant Foot Yam) - 250 g

To Grind
Roasted gram - 100 g
Coconut - 2 tablespoon
Ginger - 1 inch
Garlic - 3 
Red Chilli - 4
Fennel Seeds - 1 teaspoon
Cardamom - 1

Onions - 1(big)
Chopped Garlic - 3
Oil - for frying
Poppy Seeds - 1 tablespoon
Curry Leaves
Salt


Procedure

  • Remove the skin from yam.
  • Grate it using a grater.
  • Heat water mildly in a vessel and dip grated yam in water (If the water is so hot then the yam will get mashed).
  • Take a blender and add in roasted gram and make it powder. 
  • Press the yam completely to remove water completely.
  • Now transfer the powder to a bowl and add in other items mentioned under 'To Grind' along with grated yam.
  • Grind it till all the ingredients gets mixed properly. Don't make it a smooth paste. (Don't add water).
  • Take out the grinded mixture in a bowl along with powdered roasted gram, add in chopped onions, chopped garlic, curry leaves and salt.
  • Add in 2 teaspoons of oil to mix it well. 
  • If you feel the mixture is so tight, add in 1 or 2 tablespoons of water.
  • Don't make it too loose.
  • Make small balls out of the mixture.
  • Take a pinch of poppy seeds and spread in your hands before making Kola balls.
  • Heat oil in a pan for deep frying.
  • Drop in the prepared kola balls and fry in batches.
  • Fry until it becomes brown in color. 
  • Drain the oil from the kola balls.
  • Outer crispy and inner soft Yam kolas are ready.

Note : Please check whether the shape is maintained. If the kolas break in oil, add in some rice flour to the grinded mixture and fry the next batch.

Yummy Elephant yam kolas are ready. Serve it hot and njoy the taste 😊😊😊

Masal Vadai

Hello buddies πŸ™πŸ™πŸ™ Vadai is a type of savoury that is deep fried in oil. There are many variants of vadai. Among that  masal vadai is a crispy crunchy one. Masal vadai also known as paruppu vadai is made out of channa dal. The ingredients for this vadai are easily available in home. For making tamil traditional meal a special one, masal vadai is a must.


Making Masal Vadai is really simple except the time it takes for soaking channa dal. Onions and fennel seeds which we add in this recipe gives a very good flavour to it. The shaping of this vadai is not a big deal. Just it needs to be flattened. We can make some variants with this masal vadai. We will see those recipes in the future posts.



Preparation Time : 10 mins
Soaking Time : 2 hours
Cooking Time : 15 mins




Ingredients
To Grind 
Channa dal - 200g
Red Chilli - 4
Fennel Seeds - 1 teaspoon
Salt

For Mixing
Onions - 2 (big)
Fennel Seeds - 1 teaspoon
Curry Leaves

Oil - for frying

Procedure
  • Soak the Channa dal for 2 hours.
  • Drain the water completely from the dal.
  • Take a blender and add in the soaked dal, red chillies, fennel seeds and salt
  • Grind it coarsely. Don't make a fine paste because, vadai won't be crunchy with a fine paste.
  • Take it out in a bowl and add in the chopped onions, chopped curry leaves and whole fennel seeds.
  • Mix well.
  • The above said ingredients gives a beautiful aroma to the vadai.
  • Now time to make vadai. 
  • Make small balls and flatten it by pressing it in hands.
  • Heat oil in a kadai for deep frying.
  • Fry the shaped vadai in batches.
  • Let it get fried till the color changes to brown.
  • Taste one, it has to be crispy and crunchy.

Salt

Procedure

Aloo stuffing

  • Heat one tablespoon of oil in a pan and add in mustard seeds. Let it splutter.
  • Add in the chopped onions and saute for 2 to 3 mins till it becomes transparent.
  • Time to add chopped carrots and greens peas (Totally optional. Good for health and gives a good color to the dish)
  • Let it fry for 2 mins so that the raw smell goes away
  • Now add chopped green chillies, garam masala, turmeric powder and salt.
  • Garama masala gives a good flavour to the dish.

Bonda Preparation

  • Heat Oil in a pan for deep frying
  • In the meantime make balls out of the prepared potato
  • Make a batter with the bajji mix.
  • Coat the potato balls well with the mix and drop in oil.
  • Let it fry till it becomes golden brown.
  • Take it out and serve it hot.

Choco Shots

Good morning guys 😊😊😊 Yummy creamy chocolaty Choco Shots. The taste of it is amazing and will make you an addict for it. Apart from its taste it is really simple to make. This is a perfect short dessert. Come let's see the recipe.



Preparation Time : 10 mins
Freeze Time : 2 to 3 hrs

Ingredients

Any Chocolate biscuit - 10 biscuits
Whipping cream - 1 cup
Cocoa Powder - 2 tablespoon


Procedure

  • Make the chocolate biscuits (I prefer oreo) into powder. Just crush them.
  • Take the whipping cream and add cocoa powder. (Aquafaba can be used instead of whipping cream. We will see what is aquafaba and how to make it in the upcoming blogs)
  • Just whip it till cocoa powder gets mixed completely and soft peak appears(don't over whip it)
  • Now take choco shot glasses or any glass of that kind.
  • Place a layer of crushed biscuits. 
  • On top of that, layer with cocoa mixed whipping cream.
  • Fill 3/4th of the cup.
  • Finally on top make another layer with biscuit powder or chocolate syrup can be used(optional).
  • Freeze it for a minimum of 2 hours.

Yummy Choco Shots is ready :) Serve it cool. Nobody can stop with one glass. So prepare lots and make everyone enjoy.

Paal Payasam

Hello friends πŸ‘‹πŸ‘‹πŸ‘‹ Special lunch in home without a payasam? Nah, if you say we had payasam for lunch then that means you had a special lunch. In that order paal payasam stands first and it is one of the favourite for many. It is really simple and quick to make. Let's see the recipe for it.



Preparation Time : 2mins
Cooking Time : 20 mins
Total Time : 22 mins

Ingredients

Javvarisi - 50g
Semiya - 50 g
Milk - 250 ml
Sugar - 150 g
Elachi - 3 to 4
Cashews 
Raisins
Ghee


Procedure

  • Boil water in a vessel and add javvarisi. Let it get cooked well. The color will become transparent.
  • If you take out one and press with fingers, you can find whether it got cooked or not.
  • Now add in the semiya. It gets cooked very fast in just a minute or two.
  • Add in sugar and let it dissolve completely.
  • Time to add elachi. Crush and add, so it gives more flavour.
  • Slowly add in milk. Mix it completely. Make sure the consistency is thin. If not add some more milk.
  • Because it gets thick in sometime as it has cooked javvarisi.
  • Turn off the flame.
  • Take a kadai and heat some ghee for roasting raisins and cahews.
  • Add as much as raisins and cashews as required.
  • Fry the raisins first. In a minute or two it gets fluffy. Take it out.
  • Now add in cashews and fry till it becomes slightly brown.
  • Add the raisins and cashews along with the ghee to the prepared payasam.

Tasty paal payasam is ready. Serve it for meal and enjoy the occasion.

Vazhaipoo Kuzhambu

Good evening friends πŸ™‹πŸ™‹πŸ™‹ I never knew kuzhambu can taste that good until I tasted Vazhaipoo Kuzhambu. If somebody doesn't like vazhaipoo this is the best way to include it in their diet. There are lots of benefits with banana flower. It is a must to include in your diet in any form and here comes one.

Vazhaipoo - 1

Tomato - 4
Tamarind - lemon sized

Coriander Powder - 1 and half tablespoon

Fenugreek - 1/2 teaspoon
Curry Leaves
Salt


Procedure
Cleaning Vazhaipoo

  • First apply gingelly oil to your hands. Because it prevents your hands from becoming sticky.
  • Now open the flower and collect all the florets.
  • Spread it in a newspaper or any sheet.
  • Take each floret and remove the stamen which has a small black coloured head.
  • Remove the thin white bag like covering too.
  • No need to dip in water as we are going to fry it. For other preparations with this flower we have to immerse it in water.
  • No need to chop too.

Frying Florets

  • Heat oil in kadai for deep frying the florets.
  • Once the oil is hot fry it in batches. Fry till it becomes crispy.
  • Drain the oil completely and collect it.

Preapring Kuzhambu

  • Soak the tamarind in water while you start to clean the flower.
  • Get the tamarind juice out of it and keep ready.
  • Add 1 tablespoon of oil in another kadai for tempering.
  • Add in mustard seeds. once it splutters add in fenugreek and curry leaves.
  • Now add chopped onions and let it saute for 2 to 3 mins
  • Add chopped tomatoes to it. Let it both fry for sometime.
  • Time to mix the tamarind juice. 
  • Add chilli powder, coriander powder and salt.
  • Give it a good mix and let it boil and leave all the raw smell.
  • Once raw smell is gone add in the fried florets and mix it well.
  • Don't cook for too long after adding the fried florets, as it is already really cooked well in oil.
  • Serve it with hot rice.

Baked moms - 10

Garlic - 10 cloves

Red chilli sauce - 1 tablespoon
Soy sauce - 1 tablespoon
Tomato Sauce - 1 tablespoon

Procedure
  • Make the momos as mentioned in previous post.
  • Heat oil in a pan.
  • Add in chopped garlic and saute for a minute.
  • Now add chopped onions and green chilli. Let it fry for 2 minutes.
  • Add in all the sauces and give it a good mix.
  • Baked momos will be so delicate, so gently drop the momos in the prepared sauce.
  • Gently give a mix and coat the momos with the sauce.

Good morning buddies 😊😊😊 Today is Aadi Peruku. Every year the 18th day of tamil month Aadi is celebrated as Aadi Peruku. It is a tradition to thank water for making us sustain in this world. People used to worship near river banks, lakes, well and nowadays even near water pipes. Let us thank the water god by preparing a simple recipe that is special for this day.


Preparation Time : 10 mins

Ingredients
Rice (pacharisi) - 100g
Sesame seeds - 1 tablespoon
Roasted gram - 2 tablespoon
Jaggery - 100g
Coconut - 2 tablespoon


Procedure

  • Wash and soak the rice in water for 1 hour.
  • Then spread the soaked rice in a dry cloth after draining the water 
  • Let it get dried and leave the excess water.
  • Now add sesame seeds, roasted gram, jaggery and shredded coconut.
  • Give it a good mix. Jaggery will start to leave water that makes it super tasty.

Jaggery

Procedure
  • Dry roast the red chillies and pepper
  • Take a mixie jar and add the curry leaves, salt, tamarind, jaggery, roasted red chilli and pepper.
  • Grind it finely by adding water.
  • Heat a kadai, add oil. Once it get hot add the mustard seeds, wait till it splutters.
  • Add asafoetida and turmeric powder.
  • Now add in the grinded paste, let it boil and get thickened.

  • Once it slightly starts to change color add in chopped onions and tomatoes.
  • Saute it for 5 mins
  • Now add in red chilli powder and the salt according to taste.
  • Give it a good mix and let it fry for some 15 mins.
  • Grinded coconut can be added for taste. But it is totally optional.

Cumin seeds - 1 teaspoon
Garlic - 10 cloves
Coconut - 2 tablespoons 
Salt
Water



Procedure

  • Grind together chopped onions, garlic, cumin seeds and coconut.
  • Heat a pan and add the grinded mixture.
  • Let it boil and the raw smell goes away. Then add salt and  3 cups of water.
  • After it comes to a boiling state, add in the drumstick leaves.
  • Let it cook for 2 - 3 mins. Because drumstick leaves will be cooked very fast.
  • Finally if you need some oil flavour you can add 1 tablespoon of gingelly oil. But it is totally optional.


Serve hot. A soup with lots of benefits. Have a healthy life.

Ingredients
Sesame Seeds - 50g
Red Chilli - 8
Garlic - 8 to 10 cloves
Tamarind - gooseberry sized
Salt



Procedure

  • Wash the sesame seeds. If it is black sesame seeds wash it multiple times till all the black dust goes away.
  • Dry it properly. Store and use whenever needed.
  • Take out 50 g of sesame seeds and fry it in a kadai without adding oil.
  • It has to be fried till it starts to splutter.
  • Take out and let it cool. Now add the red chilli and fry for a minute.
  • Take a mixie jar, add in fried red chillies and grind it.
  • Then add the sesame seeds, salt and tamarind along with red chillies grinded and grind. 
  • Finally add chopped garlic and grind.
  • Don't add water. Grind it till it gets mixed properly and looks like shown in the picture. 
  • Don't grind for too much time. Or else it will lose its podi consistency and will start to leave oil.

Tasty ellu podi is ready. The aroma that comes out of it is awesome. Njoy the taste and health benefits.

  • Heat 1 tablespoon of oil in a pan and add in the garlic cloves.
  • Let it get cooked for 2 to 3 mins.
  • Now add in the chopped onions and let it saute for 2 minutes.
  • Add chopped tomatoes and cook well.
  • Now mix red chilli powder and coriander powder along with onions and tomatoes.
  • Add in the tamarind juice and give a good mix. Add salt and water as required.
  • Let it boil, get thickened and all the raw smell goes away.

Tasty garlic kuzhambu is ready. It goes well with rice, idli. Rice, garlic kuzhambu and pappad is a perfect combo.
For easily picking garlic, take toothpicks and collect the garlic cloves in it before cooking. So when you serve it will be easy to take out.

Suraa Puttu (The Whitey)

Hi Buddies 😊😊😊 Suraa (Shark fish) is one of the tasty non veg item. To make it even more tasty to eat, we are going to see a simple recipe here. In this recipe we are going to add more of garlic that gives a good flavour.



Preparation Time : 15 mins

Ingredients

Shark fish - 250g
Onions - 3(big)
Ginger Garlic Paste - 2 tablespoons
Green Chilli - 2
Turmeric Powder - 1/2 teaspoon
Oil - 2 tablespoons
Curry Leaves
Salt



Procedure

Boiling Fish

  • Heat water in a vessel let it come to boiling state.
  • Now add in the fish pieces.
  • Let it cook for 5 - 7 minutes.
  • White foam kind will start to appear. At that point turn off the flame and take out the fish pieces.
  • Let it get cool.
  • Now carefully shred the fishes finely and remove the bones from it.

Puttu Preparation

  • Heat oil in a pan and add in ginger garlic paste.
  • Let it saute for a minute, then add chopped onions and green chillies.
  • Let the onions become transparent.
  • Now add curry leaves, turmeric powder and salt.
  • Mix it well and add in the prepared shred fish.
  • Continuously mix it so that it will not stick to the pan
  • Let it cook for 15 mins. It will hold a juicy consistency and it will not get fried.


That's it. Suraa puttu is ready. Eat it hot and enhance your health.

To my belief it came out really well and very crispy as like the restaurant style. I recommend you to give it a try by following the steps given below.

Ingredients

Boiled Corn Kernels - 3 cups
Maida - 1 tablespoon
Corn flour - 1 tablespoon
Garlic - 7 to 10
Onions - 2
Pepper Powder - 1/2 teaspoon
Coriander leaves 
Oil
Salt



Procedure

Frying corn

  • Add the boiled corn kernels to a bowl (If you are having fresh corn, take out the kernels and boil it by adding water).
  • Drain the excess water from corn by spreading it.
  • Now add 1/2 tablespoon of maid and cornflour and give it a good mix.
  • While mixing gently press the corn, so that it opens a bit. This prevents spluttering of corn when frying in oil.
  • If you feel water is less and the corn is not getting coated properly add a little bit of water and mix again.
  • Add the remaining cornflour and maida and coat the corn really well. 
  • All parts of corn must be coated with a layer of flour.
  • Keep it aside and heat oil in a kadai for frying.
  • When you drop the corn it may splutter. If you are trying for first time close the kadai till it fries.
  • Once it is done all the corn kernels will start to float and will have a light brown color. At that stage it can be taken out.
  • Drain the oil and collect it in a vessel.

For Topping

  • Heat a tablespoon of oil and add chopped garlic and onions.
  • After 2 to 3 mins add coriander leaves, pepper powder and salt.
  • Add the fried corn kernels and give it a good mix.

That's it. Restaurant style crispy corn is ready. Serve it hot. Try this recipe and taste it.

Ingredients
Noolkol - 2
Onions - 2(big)
Tomatoes - 2
Garlic - 7 to 8
Coriander Powder - 1 and half tablespoon
Chilli Powder - 1/2 tablespoon
Turmeric Powder - 1/4 teaspoon
Mint Leaves
Salt

To grind
Pattai - 1/2 inch
Cardamom - 2
Clove - 1
Garlic - 5
Coconut - 1/2 cup
Fennel Seeds - 1 teaspoon




Procedure

  • Grind everything mentioned under 'to grind' to a smooth paste.
  • Heat oil in a cooker and add chopped garlic. Saute for a minute.
  • Then add chopped onions. After a minute or two add tomatoes.
  • Now add noolkol, coriander powder, chilli powder, turmeric powder, salt, grinded paste and mint leaves.
  • Add required amount of water.
  • Close the cooker, keep the flame in high and wait for one whistle.
  • Then simmer the stove and let it cook for 15 mins.
  • Turn off the flame, let the pressure gets released.

Quick Bread Omelette

Ingredients 

Eggs - 2
Bread - 2 slices
Onions - 2(big sized)
Tomato - 1
Chilli powder - 1/2 tablespoon
Turmeric Powder - a pinch
Pepper Powder
Coriander Leaves
Salt


Procedure

  • Chop onions and tomatoes.
  • Take a bowl, add eggs to it and beat it well (so that the omelette will be fluffy).
  • Now add the chopped onions, tomatoes, chilli powder, turmeric powder, pepper powder, chopped coriander leaves and salt.
  • Mix them well.
  • Heat a pan and spread one tablespoon of oil.
  • Now spread the egg mixture to the pan, dip the bread pieces in egg and turn the other side of the bread, so that the egg juice is absorbed on both sides of the bread.
  • After 2 mins carefully turn the omelette along with the bread.
  • After a minute or two the tasty bread omelette is ready.


You can also spread a layer of mayonnaise on bread, so that it tastes even yummy.
Serve hot with tomato ketchup😊

Sweet Corn Soup

Hi buddies πŸ‘‹πŸ‘‹πŸ‘‹ Whenever we go to a restaurant the first thing we order is soup. In that one of the best is sweet corn soup. On trying out this recipe, I wondered how easy is a perfect restaurant style sweet corn soup. Here is the recipe for it.



Preparation Time : 10 mins
Cooking Time : 20 mins
Servings : 4

Ingredients

Sweet corn - 1 cup
Carrot - 1/2 cup
Beans - 1/2 cup
Onions - 3(medium sized)
Garlic - 5
Butter - 1 teaspoon
Corn Flour - 1 tablespoon
Pepper powder 
Salt
Water


Procedure

  • Take half cup of corn and grind it to a smooth paste.
  • Chop carrot, beans, onions and garlic finely.
  • Heat butter in a pan and add garlic. Saute for a minute.
  • Now add onions. Let it cook for a minute
  • Add the chopped carrot and beans. 
  • After two minutes add the grinded corn.
  • Add one liter of water and salt.
  • Close the pan and let it boil for 5 - 7 mins
  • Check the vegetables, if it is not cooked properly close it again and let it cook.
  • Add half more liter of water and let it boil.
  • All the green smell from the vegetables will go away.
  • Now make corn flour slurry and add it to the boiling mixture.
  • In few minutes it will start to get thickened.
  • Finally add pepper powder to it.

Serve hot in cupsπŸ’™πŸ’™πŸ’™. You will really be amazed with the taste of it.

Peanut Butter

Preparation Time : 5 mins
Cooking Time : 10 mins
Total Time : 15 mins

Ingredients 

Roasted Unsalted Peanut - 100 g
Sugar - 2 tablespoon
Peanut Oil - 2 tablespoon
Cocoa Powder - 1 tablespoon (optional)


Procedure

  • If the peanuts are not roasted, roast it in a pan for 5 - 10 mins till it changes color slightly.
  • Remove the skin out of it.
  • Add the peanuts in blender and grind for 1 min.
  • Now it might have become powder.
  • Add 1 tablespoon of oil.
  • Use a spatula to collect everything from the edges and grind it for another minute.
  • Repeat the same process till it becomes moist.
  • Now add sugar and the other tablespoon of oil.
  • Grind it in 1 minute intervals till soft peaks appear.
  • I have added cocoa powder to add flavor. You can skip this step if you don't want choco flavor in it.
