So it is important to take up all the vegetables periodically in such a way that all the essential nutrients gets balanced. In that order here we going to see a simple recipe made out of sundaikkai. Sundaikkai is rich in iron which prevents you being anemic. It is one of the best food to be taken by postpartum mother's who feed their babies. Here comes the benefits followed by the recipe.

Ingredients
Sundaikkai - 200 g
Onions - 3 (big)
Tomatoes - 3
Chilli powder - 1 teaspoon
Salt
Oil
Procedure
- Wash the sundaikkai and make a slit on each one so that it has a mouth open. (Don't break into two). It will make the masala enter into it and it will cook fast.
- Heat one tablespoon of oil in a pan and add the slit sundaikkai.
- Sprinkle some salt on it so that it cooks fast.
- Once it slightly starts to change color add in chopped onions and tomatoes.
- Saute it for 5 mins
- Now add in red chilli powder and the salt according to taste.
- Give it a good mix and let it fry for some 15 mins.
- Grinded coconut can be added for taste. But it is totally optional.
