Crispy Bitter Gourd Chips

Hi all😊😊😊... Most of us used to hate bitter gourd because of the bitter taste of the vegetable. But I bet you, all will start loving this crispy bitter gourd chips which removes all of its bitterness completely.
The highlight of this recipe is its crispiness. Let's have a look at the recipe

Ingredients
Bitter gourd - 2 (big)
Gram Flour : 1 tablespoon
Rice Flour : 1 tablespoon
Chilli powder : 1 teaspoon
Fennel Powder : 1/2 teaspoon
Turmeric Powder : 1/4 teaspoon
Salt
Oil


Procedure

  • Cut the bitter gourd into rings.
  • Add turmeric and salt to it and spread in a plate for 5 mins. So that it leaves excess water.
  • Now take a bowl, add bitter gourd, gram flour, rice flour, chilli powder and fennel powder.
  • Give it a good mix. If the mixture doesn't coat the bitter gourd rings, sprinkle some water. Don't add excess water.
  • Heat Oil in a pan and drop the rings one by one. It avoids everything getting sticked to each other
  • Let it fry till it turns completely brown and crispy. One clue is the sizzling sound will get reduced.
  • Take it out and spread it in a tissue paper. It will take out the excess oil.

Coco Choco (Home made Bounty)

Hi buddiesπŸ‘‹πŸ‘‹πŸ‘‹ Here comes the tasty delicious yummy Coco ChocoπŸ˜‹πŸ˜‹πŸ˜‹. Mouth watery dish. I can't resist sharing it as soon as I tasted it. On seeing its simplicity hope you all try it immediately. Without any delay let's see the recipe.



Preparation Time : 10 mins
Cooking Time : 30 mins
Total time : 40 mins


Ingredients 

Coconut - 1
Milk - 250ml
Sugar - 200g
Chocolate - 100g
Butter - 25g



Procedure

Step 1 : Prepare Coco

  • Heat a kadai and add milk. Stir is continuously till it gets thickened like kova.
  • Now add sugar to it. Let it become little sticky.
  • Add the grated coconut to it and give a good mix. Keep a look that it doesn't loose all the moisture.
  • Grease a plate with ghee and spread the prepared coco. Let it cool for sometime.
  • Make it into small portions and shape it however you want.
  • Freeze it for 30 mins.

Step 2: Preparing Coco Choco

  • Heat water in a vessel and keep a bowl on top it, so that it becomes a double boiler.
  • Now add butter and chocolate in the bowl and let it melt.
  • Bring the freezed cocos and coat it with melted chocolate.
  • Plate it and freeze it for an hour.

Outer chocolaty, inner juicy coconut makes it extremely delicious. Take out and delight everyone. Try and njoy.

Rice Flour Roti (Arisi Maavu Roti)

Hello all😊😊😊. Simple Roti made out of rice flour. Quick, simple and tasty dinner recipe. Give it a try.


Preparation Time : 10 mins
Cooking Time : 10 mins
Total Time : 20 mins
Servings : 2

Ingredients

Rice Flour : 250g
Onions : 4(big)
Green Chillies : 2
Cumin Seeds : 1 teaspoon
Salt
Water
Oil


Procedure

  • Take a bowl and add rice flour, chopped onions, chopped green chillies, cumin seeds and salt.
  • Heat the water but don't heat till it boils.
  • Add the hot water little by little to the flour and mix it.
  • Add water till you can make it into a bigger round.
  • Divide it into small portions.
  • Take butter paper or any milk packet cover, apply oil and start spreading the dough.
  • Take it out and roast it in a tawa. At a time you can make 4 rotis.
  • Apply oil and roast on both sides.
These rotis are very soft. It goes well with Coconut chutney. Enjoy the taste😊😊😊. Quick and simple.

Ridge Gourd Skin Chutney (Pirkangai thol chutney)

Hi friendsπŸ‘‹πŸ‘‹πŸ‘‹. Here comes a recipe with vegetable skin which we usually consider as waste. Yes, Ridge gourd skin can be used to prepare tasty chutney. Procedure follows


Preparation Time : 10 mins
Cooking Time : 10 mins
Total Time : 20 mins
Servings : 2

Ingredients:

Ridge gourd - 1
Tomatoes - 2 medium sized
Urad dal - 50g
Red Chilli - 5 
Garlic - 5 
Coconut - half cup
Tamarind - Gooseberry sized
Oil - 1 tablespoon
Salt


Procedure:

  • Scratch and remove the rough skin from ridge gourd. That can't be used.
  • Peel the next layer of skin and save it for chutney.
  • Heat Oil in a kadai and roast red chillies. Take it out.
  • Now add urad dal and roast it till color changes slightly. Take it out.
  • Add some more oil and roast the ridge gourd skin collected, for about 5 mins.
  • Now add the shredded coconut and tomatoes.
  • Take out the mixture and allow it to cool.
  • Grind this mixture, roasted redchilles and urad dal along with garlic, tamarind and salt.
  • Add water as required.
  • If needed heat oil and add mustard seeds and curry leaves. Wait till it sputters and add to the chutney.

Veg Momos

Hi folksπŸ‘‹πŸ‘‹πŸ‘‹... Hope you are enjoying the dishes. Next, here comes the yummy yummy snack recipe 'vegetable momos'. Take a look at the procedure and try it out.


Preparation Time : 10 mins
Cooking Time : 20 mins
Total Time : 30 mins
Servings : 3 (9 to 10 pieces)

Ingredients

Maida : 2 cups
Onion : 1 cup
Cabbage : 1 cup
Carrot : 1 cup
Corn : 1/2 cup
Ginger garlic paste : 2 teaspoons
Green Chilli : 3
Pepper powder : 1/2 teaspoon
Oil
Salt


Procedure

Step 1 : Preparing Dough

  • Put maida in a bowl, add a pinch of salt, add water little by little 
  • Make a soft dough and let it rest for 15 - 20 mins.

Step 2 : Momos Filling

  • Chop onions, cabbage, carrot and green chillies finely.
  • Heat Oil in a kadai and add ginger garlic paste.
  • Once the raw smell goes away add the onions and saute for 2 - 3 mins
  • Add chopped green chillies, cabbage, carrot and corn
  • Add pepper powder and salt as required.
  • Saute for 7 - 8 mins and the momo filling is ready.

Step 3 : Bake the momos
  • Make the dough into small sized balls and roll it out to 3 - 4 inches
  • Keep the momo filling in the center and start to make small small folds
  • Collect all folds and close the filling. 
  • Preheat an idli cooker with some water for 5 mins.
  • Place the momos in the idli plate and boil it for around 10 mins
Take out the momos. Plate it and surprise everyoneπŸ˜‹πŸ˜‹πŸ˜‹. Don't forget to serve it hot. It goes well with chilli sauce. Yummy yummy....

Suraa Puttu (The Browny)

Good evening folks πŸ™‹πŸ™‹πŸ™‹ 'Suraa(Shark fish) Puttu'.....😍 This is one of my favourite non-veg dish. As the title states, this recipe is really very very simple with few steps. Come on let's see the procedure.



Preparation Time : 10 mins
Cooking Time : 30 mins
Total Time : 40 mins
Servings : 4

Ingredients
Shark fish : 500g (cut into pieces without skin)
Onions : 5 big sized
Chilli powder : 1 tablespoon
Fennel powder : 1 teaspoon
Oil : 2 - 3 tablespoon
Salt

Procedure

Step1 : Boiling the fish

  • Take a vessel and heat water till it makes bubbles.
  • Add the fishes in water and allow it to cook till white foam appears.
  • It takes around 5-7 mins.
  • Take out the fishes from water and allow it to cool.
  • Mash the boiled fish and remove the bones from it.
  • Add Chilli powder and salt to the mashed fish and let it rest for 10 mins

Step 2 : Puttu Preparation

  • Heat oil in a kadai and add fennel powder.
  • Add onions and fry till it becomes light brown.
  • Now add the prepared fish and give it a good mix.
  • Mix it continuously or else it will stick to the kadai.
  • Continue for 15 to 20 mins till it reaches golden brown color.(It will look like shredded and roasted coconut)

Aloo Paratha

Preparation time : 10 mins
Cooking time : 20 mins
Total time : 30 mins

Ingredients

Wheat flour (as required)
Potatoes : 4 medium sized 
Ginger garlic paste : 2 teaspoons
Chilli powder : 3/4 tablespoon
Garam masala : 1/2 teaspoon
Green Chilles : 2
Oil - 1 tablespoon
Coriander Leaves
Salt


Procedure

Step 1 : Prepare potato filling
  • Boil the potatoes, peel of their skin and smash it well.
  • Heat oil in a kadai and add ginger garlic paste.
  • Once the raw smell goes off add chopped green chillies, chilli powder and garam masala powder.
  • Then add the smashed potatoes and salt to it and give it a good mix.
  • Add chopped coriander leaves.
  • Mix it continuously till it doesn't stick to the kadai and can be shaped to a bigger ball.
Step 2 : Make the dough and stuff with filling
  • Knead the wheat flour to a perfect soft dough by adding water little by little as we make for parathas and let it rest for 15 mins.
  • Now take out the dough and make into small balls.
  • Roll them out into 3 to 4 inch circles.
  • Make the potato filling as small balls and place it in the rolled circles.
  • Start small small folds from the edges like keeping pleats for a saree. 
  • Bring them together and make it like a knot. (It looks like a 'surukupai')
  • Flatten it with hands.
  • Now again roll it carefully to make normal parathas.
Step 3 : Roast parathas
  • Roast the paratha by applying oil on both sides of it.
  • It goes well with onion chilli raita.

Choco Lava Cake in Aluminium Foil without Oven

Hi all 😊😊😊. In this recipe we are going to see how to make delicious, mouth watery choco lava cake. U can't imagine the simplicity of this recipe. This is very easy to make with an aluminium foil and with cooker. So let's not delay and jump into the recipe.



Preparation Time : 15 mins
Cooking Time : 10 mins
Total Time : 25 mins
Servings : 4

Ingredients

For Batter
All Purpose flour - 50 g
Cocoa Powder - 50 g
Granulated Sugar - 50g 
Baking Soda - a pinch

To melt
Chocolate : 80 - 100 g (Any, I used dairy milk)
Butter : 25 - 30 g

Milk - 150ml
Aluminium Foil


Instructions

  • Powder the granulated Sugar.
  • Sieve all the ingredients listed under 'For Batter' into a bowl.
  • Mix all the ingredients together by adding milk. The batter has to be thin(but not watery) when compared to other cake batters.


  • Boil water in a vessel and keep a bowl on top of it so that it works as a double boiler.
  • Add butter and 80% of chocolate in the bowl and allow them to melt.
  • Mix this melted chocolate with the batter.


  • In the meantime take a cooker remove gasket and whistle. 
  • Spread sand inside the cooker.
  • Place a stand and a plate on top of it.
  • Close the cooker and preheat it in a flame between medium and high for 15 mins


  •  According to the shape you need, take a tumbler or any vessel of that kind and shape the aluminium foil as small cups.
  • Grease the aluminium foil with butter.
  • Put some all purpose flour and spread it all over and remove the remaining flour form the foil.
  • Fill the aluminium foil 3/4th with the prepared batter.
  • Dip two pieces of chocolate inside the batter.
  • Keep those inside the cooker and close it.
  • Maintain the flame in between medium and high and let it cook for 10 mins.(This time varies a bit according to the vessels you use)
  • After 10 mins open the cooker and the cakes must have a shaky consistency in the middle and must have cooked at the edges. (For sure we can reach the correct consistency in the second attempt, if we miss it in the first attempt😊)


Take out the lava cakes and serve hot. We can see the wounderful lava coming out of the cakeπŸ’“πŸ’“πŸ’“. Njoy the taste and amaze everyone.
