Hi friends👋👋👋. Here comes a recipe with vegetable skin which we usually consider as waste. Yes, Ridge gourd skin can be used to prepare tasty chutney. Procedure follows

Ingredients:
Ridge gourd - 1
Tomatoes - 2 medium sized
Urad dal - 50g
Red Chilli - 5
Garlic - 5
Coconut - half cup
Tamarind - Gooseberry sized
Oil - 1 tablespoon
Salt

Ingredients:
Ridge gourd - 1
Tomatoes - 2 medium sized
Urad dal - 50g
Red Chilli - 5
Garlic - 5
Coconut - half cup
Tamarind - Gooseberry sized
Oil - 1 tablespoon
Salt
Procedure:
- Scratch and remove the rough skin from ridge gourd. That can't be used.
- Peel the next layer of skin and save it for chutney.
- Heat Oil in a kadai and roast red chillies. Take it out.
- Now add urad dal and roast it till color changes slightly. Take it out.
- Add some more oil and roast the ridge gourd skin collected, for about 5 mins.
- Now add the shredded coconut and tomatoes.
- Take out the mixture and allow it to cool.
- Grind this mixture, roasted redchilles and urad dal along with garlic, tamarind and salt.
- Add water as required.
- If needed heat oil and add mustard seeds and curry leaves. Wait till it sputters and add to the chutney.
