Paneer Gravy

Hello foodies 😊😊😊. We are going to see a recipe with has an ingredient favorite for most. Yes it is paneer. This simple delicious gravy made with paneer makes everyone to eat a scoop extra. There are many variants of gravy that can be made out of paneer. Here is a simple try of one among those. Please follow the recipe and give a try.

Ingredients
Paneer - 200 g
Onions - 2 (big)
Tomatoes - 3 (big)
Ginger Garlic Paste - 1 tbsp
Green Chilli - 2
Chilli powder - 1 tbsp
Coriander Powder - 1/2 tbsp
Garam Masala - 1/2 tbsp
Turmeric Powder - 1/4 tbsp
Coriander Leaves - a hand full
Oil - 3 tbsp
Salt

For Grinding
Cashews - 5 to 10
Almonds - 5 to 10
Kuskus -  1tbsp
Coconut Grated - 1/2 cup

For Tempering
Cloves - 2
Cinnamon - 1 inch
Cardamom - 2
Cumin Seeds - 1 teaspoon



Procedure

Frying Paneer:
  • Heat 1 tablespoon of oil in a pan.
  • Cut the paneer into slices and start roasting them in the oil.
  • Flip, once the bottom turns golden.
  • Let all the sides turns golden brown.
Grinding:
  • Add all the ingredients mentioned under for grinding in a blender.
  • Make a smooth paste out of it.
  • Keep it aside, we can add it at later stage.
Preparing Masala:
  • Heat a kadai and add oil to it.
  • Once the oil gets hot, add the items mentioned under for tempering. Let it splutter.
  • Chop onions finely and add it. Let it get golden brown color.
  • Now add in chopped tomatoes, ginger garlic paste and chopped green chillies.
  • Let the tomatoes turns mushy and the raw smell of ginger garlic paste goes away.
  • Now it is time to add in the chilli powder, coriander powder, turmeric powder and garam masala.
  • Add in necessary salt.
  • Cook for 5 mins.
  • Take the ground paste and add to it.
  • Let it cook for 5 to 7 mins.
  • Add in water as required according to your desired consistency.
  • Time to add in fried paneer and leave for 2 to 3 mins.
  • Top with some finely chopped coriander leaves.

It goes well with roti, chapathi, pulav. Serve hot and enjoy the delicious taste of this simple paneer gravy. Definitely you will find the taste as like restaurant style. Give a try and share your valuable comments.

Dahi Paratha

Hey buddies ✋✋✋. Paratha with Stuffing is always delicious and mouth watery. There are many variants of paratha. We have already seen aloo paratha recipe in our blog. Benefits of yogurt
  • Rich in calcium which is an essential nutrient needed for healthy bones and teeth.
  • Also contains Vitamin B2, B12, magnesium and potassium.
  • Good for mouth ulcers and stomach ulcers.
  • It is always preferred to make yogurt in home, so that we can avoid preservatives.
Preparation Time : 10 mins
Cooking Time : 10 mins
Serves : 2

Ingredients

Wheat Flour - 2 cups
Hung Curd - 1 cup
Onions - 2 medium sized
Chilli powder - 1/2 tablespoon
Jeera Powder - 1/4 tablespoon
Garam Masala - 1/4 tablespoon
Green Chilli - 1
Salt
Oil



Procedure
Preparation of  hung curd:
  • Hung curd is nothing but yogurt  with water drained out of it.
  • Tie the curd in a muslin cloth and hang it for 3 - 4 hours.
  • All the excess water gets drained.
  • Now our required hung curd is ready.

Preparation of paratha:

  • Take a bowl and add in wheat flour, salt and one tablespoon of oil.
  • Give it a good mix.
  • Add little by little water to the wheat flour and prepare the dough.
  • Keep it aside for 30 mins, cover it with moist cloth.
  • Take a bowl and add in the hung curd, chopped onions, chilli powder, jeera powder, garam masala, chopped green chilli and salt.
  • Mix well to make a smooth paste.
  • Make small parts out of the dough and start spreading those into rotis.
  • Spread two parts for one paratha.
  • Spread the curd stuffing on one roti.
  • Cover with another roti by tapping on the edges.
  • Heat the pan and sprinkle some oil.
  • Place the parathas carefully and cook it on both sides.

Prawn Thokku

Here we are going to look into a recipe, prawn thokku which tastes delicious. It can be even taken as an appetizer and the taste will never leave your tongue. Recipe goes below.

Ingredients

Prawns - 250 g after cleaning
Onions - 4 (big)
Tomatoes - 4
Green Chillies - 2
Ginger Garlic Paste - 1 tablespoon
Chilli Powder - 1 tablespoon
Grated Coconut - 1/2 cup
Fennel Seeds - 1 teaspoon
Coriander leaves
Salt
Gingelly Oil - 4 tablespoons





Procedure

  • Heat a kadai and add oil to it.
  • Once the oil gets hot, add in ginger garlic paste and cook till the raw smell goes away.
  • Add the chopped onions.
  • Let the onions cook till it turns golden brown.
  • Now add in the chopped tomatoes and green chillies.
  • Saute for about 5 mins.
  • Onions and tomatoes will turn mushy and start to leave oil from sides.
  • Now add salt and chilli powder.
  • Rinse the prawns in water 3 to 4 times till the water turns clear.
  • Now time to add in prawns.
  • Don't add any water, because prawns leave water while gets cooked.
  • Close the kadai and let it cook for 5 mins.
  • In the meantime grind the grated coconut and fennel seeds.
  • Open the pan and check whether the prawns are cooked.
  • Add in the ground paste and cook till the curry gets thick consistency.
  • Finally add chopped coriander leaves, which gives a nice aroma to the dish.
  • Plate it in a bowl and serve. It goes well with rice, roti.

Elephant Foot Yam Kola

Hello buddies 😊😊😊  Yam is a healthy food with lots of benefits in it. It is good to take yam in our day to day life. Kolas are always tasty and can be served as a appetizer. This can be the best alternative for mutton kola balls and becomes a treat for vegetarians. The recipe is easy to make. One important thing that you need to take care is the proper consistency of the mixture. Other than that it is really simple to make. Let's look into the recipe.

Preparation Time : 15 mins

Total Time : 30 mins

Ingredients

Senai Kizhangu (Elephant Foot Yam) - 250 g

To Grind
Roasted gram - 100 g
Coconut - 2 tablespoon
Ginger - 1 inch
Garlic - 3 
Red Chilli - 4
Fennel Seeds - 1 teaspoon
Cardamom - 1

Onions - 1(big)
Chopped Garlic - 3
Oil - for frying
Poppy Seeds - 1 tablespoon
Curry Leaves
Salt


Procedure

  • Remove the skin from yam.
  • Grate it using a grater.
  • Heat water mildly in a vessel and dip grated yam in water (If the water is so hot then the yam will get mashed).
  • Take a blender and add in roasted gram and make it powder. 
  • Press the yam completely to remove water completely.
  • Now transfer the powder to a bowl and add in other items mentioned under 'To Grind' along with grated yam.
  • Grind it till all the ingredients gets mixed properly. Don't make it a smooth paste. (Don't add water).
  • Take out the grinded mixture in a bowl along with powdered roasted gram, add in chopped onions, chopped garlic, curry leaves and salt.
  • Add in 2 teaspoons of oil to mix it well. 
  • If you feel the mixture is so tight, add in 1 or 2 tablespoons of water.
  • Don't make it too loose.
  • Make small balls out of the mixture.
  • Take a pinch of poppy seeds and spread in your hands before making Kola balls.
  • Heat oil in a pan for deep frying.
  • Drop in the prepared kola balls and fry in batches.
  • Fry until it becomes brown in color. 
  • Drain the oil from the kola balls.
  • Outer crispy and inner soft Yam kolas are ready.

Note : Please check whether the shape is maintained. If the kolas break in oil, add in some rice flour to the grinded mixture and fry the next batch.

Yummy Elephant yam kolas are ready. Serve it hot and njoy the taste 😊😊😊

Masal Vadai

Hello buddies πŸ™πŸ™πŸ™ Vadai is a type of savoury that is deep fried in oil. There are many variants of vadai. Among that  masal vadai is a crispy crunchy one. Masal vadai also known as paruppu vadai is made out of channa dal. The ingredients for this vadai are easily available in home. For making tamil traditional meal a special one, masal vadai is a must.


Making Masal Vadai is really simple except the time it takes for soaking channa dal. Onions and fennel seeds which we add in this recipe gives a very good flavour to it. The shaping of this vadai is not a big deal. Just it needs to be flattened. We can make some variants with this masal vadai. We will see those recipes in the future posts.



Preparation Time : 10 mins
Soaking Time : 2 hours
Cooking Time : 15 mins




Ingredients
To Grind 
Channa dal - 200g
Red Chilli - 4
Fennel Seeds - 1 teaspoon
Salt

For Mixing
Onions - 2 (big)
Fennel Seeds - 1 teaspoon
Curry Leaves

Oil - for frying

Procedure
  • Soak the Channa dal for 2 hours.
  • Drain the water completely from the dal.
  • Take a blender and add in the soaked dal, red chillies, fennel seeds and salt
  • Grind it coarsely. Don't make a fine paste because, vadai won't be crunchy with a fine paste.
  • Take it out in a bowl and add in the chopped onions, chopped curry leaves and whole fennel seeds.
  • Mix well.
  • The above said ingredients gives a beautiful aroma to the vadai.
  • Now time to make vadai. 
  • Make small balls and flatten it by pressing it in hands.
  • Heat oil in a kadai for deep frying.
  • Fry the shaped vadai in batches.
  • Let it get fried till the color changes to brown.
  • Taste one, it has to be crispy and crunchy.

Banana - 2

  • Take unsalted roasted peanuts and remove the skin.
  • Grind the peanuts to make a paste till it starts to leave oil from it.

Mustard (For tempering)
Oil (For frying)
Salt

Procedure

Aloo stuffing

  • Heat one tablespoon of oil in a pan and add in mustard seeds. Let it splutter.
  • Add in the chopped onions and saute for 2 to 3 mins till it becomes transparent.
  • Time to add chopped carrots and greens peas (Totally optional. Good for health and gives a good color to the dish)
  • Let it fry for 2 mins so that the raw smell goes away
  • Now add chopped green chillies, garam masala, turmeric powder and salt.
  • Garama masala gives a good flavour to the dish.

Bonda Preparation

  • Heat Oil in a pan for deep frying
  • In the meantime make balls out of the prepared potato
  • Make a batter with the bajji mix.
  • Coat the potato balls well with the mix and drop in oil.
  • Let it fry till it becomes golden brown.
  • Take it out and serve it hot.
